Mango Bread
An easy, classic quick bread that’s great for breakfast, a snack or even dessert. This refrigerates and freezes well.
2c Whole Wheat flour
3/4 c sugar
2 t baking soda
2 t cinnamon
½ t salt
3 eggs lightly beaten
¾ oil (soybean or canola, etc)
2+ cups diced mangos
1 T lime juice (optional)
½ c raisins
½ cup chopped nuts (walnuts or macadamia)
Whisk together wheat flour, sugar, baking soda, cinnamon and salt. In a separate bowl, mix oil and eggs. In another bowl, mix lime juice and diced mango. With a slotted spoon, remove about half of the mango cubes and set aside. Combine the remaining mango-lime mixture with the egg-oil mixture. Add dry ingredients and mix well. Add raisins and chopped nuts.
Fold in the drained mangos until just combined. Pour into greased loaf pan.
Bake at 350 degrees for about an hour for a large loaf pan, shorter baking times if you use small loaf pans or a 13” x 9” pan. Test with toothpick for doneness.
